PANCAKES AND WAFFLES
Corn Flour Pancakes
1/2 cup pancake mix http://www.weebly.com/weebly/main.php#
1/2 cup corn flour (if you use corn meal these won't be as light)
2 teaspoons baking powder
Dry mix well with your hands or a whisk.
2 beaten eggs
1/2 cup soy milk or milk
1/4 cup peanut oil
Mix well then beat into the dry ingredients.
This recipe makes 6 medium pancakes
These are very light pancakes without much flavor. I recommend serving with real maple syrup or a home made berry sauce or syrup.
